"Manufacturing of dairy products in our country is well-established. Technologists at all companies produce dairy products well and can do wonders. The range of products is wide and even more," said the Director of the Research Center of Dairy market Michael Mishchenko at the conference "How to build a plant?", organized by The DairyNews.
However, the expert noted that there are other categories of dairy products (e.g. cheese), that even technologists at large enterprises don't know how to deal with.

"99% of hard and semi-hard cheeses mature in the wrap and containers for logistics. From the point of view of the philosophy of cheese making it is almost a crime. In Europe, such cheese is only in HoReCa," said Michael Mishchenko.

According to the Research Center of Dairy market the consumption of cheese and butter in Russia significantly is reducing during the past three years.

"If we take the estimated figures for the consumption and growth of cheese production, we can see that they want to meet each other," said Michael Mishchenko, stressing that Russia has all chances to become an exporter of cheese and cheese products.

"We don't need to build a plant for the production of whole milk products. Butter and cheese are the products that can utilize excess milk that exists over some time in some regions of our country. Cheese and butter create the total capacity of the market", - concluded the expert.
