Russia produces about 150 thousand tons of spreads a year, as for butter — 220 thousand tons. This was told about by the candidate of technical Sciences, Deputy Director on scientific work of Federal state budgetary institution "VNIIMS" Elena Topnikova at the conference "Fat-and-Oil industry,", reports The DairyNews.
"There are countries where the consumption of spreads is cultivated; there they are considered to be the products of a healthy diet. In our country, consumers are accustomed to butter. In many countries, the spreads are produced as a mixture of butter with natural vegetable oils. We have a different attitude to spread. Manufacturers are trying to bring it to butter," said Elena Topnikova.

The expert stressed that according to local standards milk conteining products can contain up to 50% of substitutes of milk fat. Each manufacturer thus seeks to bring MFR to the milk fat.

"Today dairy producers are offered the new mix – milk fat replacer with a high content of butyric acid (originally designed for cheese products), also the compositions with the content of beef fat (they do not correspond to technical regulations of the Customs Union and blur the line between margarines and spreads). The spread should be healthy. We need to look for new flavors and such a ratio that the spread was a valuable product," said Elena Topnikova.
